Chicken and Wild Rice Soup

This Easy Chicken & Wild Rice Soup is a weeknight win — made with Rice-A-Roni, rotisserie chicken, and a can of cream of chicken soup for that rich, comforting flavor the whole family will love.

Ingredients:

1 box Rice-A-Roni Long Grain & Wild Rice (with seasoning)

1 tablespoon butter or olive oil

1 cup carrots, diced

1 cup celery, diced

1 small onion, chopped

2 cups cooked chicken, shredded or diced

4 cups chicken broth

1 can (10.5 oz) cream of chicken soup

Salt & pepper, to taste

Optional: milk or half & half to thin it out if needed

Instructions:

  1. In a large pot, melt butter. Add carrots, celery, and onion. Sauté for about 5–7 minutes, until softened.
  2. Pour in chicken broth. Add the Rice-A-Roni rice + seasoning packet. Bring to a boil, then reduce heat and simmer (covered) for 15–20 minutes, until rice is tender.
  3. Stir in the cooked chicken and cream of chicken soup. Mix well until the soup is fully incorporated.
  4. Heat for another 5–10 minutes on low — don’t let it boil.
  5. Taste and season with salt and pepper. If it’s too thick, add a splash of milk or broth.

Bonus Tip: Want it extra hearty? Add a handful of frozen corn or spinach at the end for a veggie boost!
